Simply delicious breakfasts: Baked Oatmeal

This is one of my favorite recipes.  Simple, delicious, and soooo good cold mornings! I’ve modified it from the original one I found to make it tastier and to serve a smaller family.

Baked Oatmeal

  • 3 cups oats
  • 1 cup milk (I use evaporated milk because of the richer flavor)
  • 1/2 cup oil
  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg

Combine all ingredients and pour into greased round 8″ or 9″ baking pan. Bake at 375 degrees for 30-40 minutes until lightly browned.

    • Thank you for sharing!! I’ve tried several heart-healthy versions of this and was sorely disappointed that it tasted like a brick or like wallpaper paste, so I’m excited to try your version! Thanks!
